Ingredients:
- 400 g chicken breast fillets - 1 onion
- 2 carrots
- 1 bell pepper
- 1 L chicken broth
- 100 g vermicelli
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Peel and chop the onion, carrots, and bell pepper. 2. Heat the olive oil in a pot and sauté the onion until soft.
3. Add the chopped carrots and bell pepper, and cook for a few minutes.
4. Add the chicken breast fillets to the pot and lightly brown them.
5. Pour in the chicken broth and bring to a boil.
6. Add the vermicelli and cook according to package instructions until tender.
7. Season with salt and pepper.
8. Serve the soup garnished with fresh herbs.
