Soft and fluffy brioche buns perfect for making burgers or enjoying on their own. Extra buns can be frozen for later use.
Preparation Time: 2 hours + rising time
Serving Size: 12 buns
Ingredients:
- 2 dl milk
- 50 g yeast
- 2 tbsp honey
- 1.5 tsp salt
- 4 eggs
- 10 dl all-purpose flour
- 200 g butter (room temperature)
- 2 egg yolks (for brushing)
- Sesame seeds (for topping)
Instructions:
1. Take the butter out to reach room temperature about an hour before baking.
2. Heat the milk until it is lukewarm. Dissolve the yeast, honey, and salt in the milk.
3. Mix the eggs into the milk with a wooden fork. Gradually add the flour in batches, then add the softened butter in small pieces. Knead the dough with a stand mixer for 8-10 minutes or by hand for 12-15 minutes. The dough is ready when it is soft and elastic; add more flour if necessary.
4. Cover the bowl with plastic wrap and place it in the refrigerator for about an hour. The dough can also be made earlier and left to rest until the next day.
5. Lightly flour the work surface and turn the dough out onto it. Knead out the air bubbles and roll the dough into a rectangle about two centimeters thick. Roll the dough up and cut it into twelve pieces. Shape the pieces into round buns.
6. Place the brioche buns on a baking sheet lined with parchment paper, cover with a towel, and let them rise for one hour.
7. Brush the tops with egg yolk and sprinkle sesame seeds on top. Bake in a preheated oven at 200°C (392°F) for 12-15 minutes, or until the tops are beautifully golden brown.
