A delicious brioche filled with rich goose liver and served with apricot puree. Preparation Time: 2 hours 30 minutes
Serving Size: 6 servings
Ingredients:
- 3 room temperature eggs
- ¾ cup honey
- 6 cups all-purpose flour
- 25 g fresh yeast
- 7 g salt
- 120 g cold butter, cubed
- Butter for greasing the baking pans
- Goose liver
- Butter/oil mixture for frying
- Thyme
- Sherry
- Apricot puree or jam for garnish
- Dried apricots
Instructions:
1. In a bowl, mix together the eggs, honey, flour, yeast, and salt until well combined.
2. Add the cold butter cubes to the dough and knead until smooth.
3. Allow the dough to rise in a warm place for about two hours until doubled in size.
4. Grease the baking pans with butter.
5. Portion the dough into the prepared pans and let it rise for an additional 15 minutes.
6. Bake in a preheated oven at 200°C (392°F) for 12-15 minutes, until the brioche is golden brown and reaches an internal temperature of at least 90°C (194°F).
7. In a skillet, fry the slices of goose liver in the butter/oil mixture with thyme; add sherry and flambé.
8. Lightly toast the brioche slices in the pan.
9. Assemble the dish by layering the brioche, piping apricot puree or jam on top, and garnishing with dried apricot pieces.
