A delicious German-inspired dish that combines savory bratwurst with crispy rösti potatoes and a creamy cheese sauce, perfect for sharing with friends.

Ingredients:

- 1 pack bratwurst (350 g)
- Olive oil
- 2 fresh sprigs of rosemary
- 1 bottle German-style bock beer (0.33 l)
- 1 large onion, roughly chopped
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 4 dl milk
- 1 tablespoon coarse grain mustard
- 275 g grated Emmental cheese
- 350 g frozen rösti potatoes
- Sea salt, to taste
- Black pepper, to taste

Instructions:

1. Poke holes in the bratwursts with a fork to prevent them from bursting during cooking.
2. Heat some olive oil in a pan and add the rosemary sprigs. Brown the bratwursts on both sides until nicely colored.
3. Pour in the bock beer and simmer gently for 10 minutes, turning the sausages halfway through.
4. Remove the bratwursts from the pan and strain the beer for later use.
5. In the same pan, add 1 tablespoon of butter and sauté the chopped onion. Set aside with the sausages.
6. Add the remaining butter and flour to the pan, cooking for a couple of minutes while stirring constantly.
7. Gradually add the milk and the reserved beer, along with the mustard. Cook while stirring until the sauce thickens.
8. Stir in the grated cheese and mix until melted. Season with salt and pepper.
9. Slice the bratwursts and place them in a greased baking dish, layering the frozen rösti potatoes on the bottom.
10. Add the sausage and onion mixture on top of the rösti, then pour the cheese sauce over everything.
11. Bake in a preheated oven at 175˚C for 30 minutes. Serve with chilled bock beer.
