Quinoa Salad with Fresh Vegetables

A refreshing and colorful salad, perfect as a side dish or light main course. Preparation time: 25 minutes
Serving size: 4 servings
Ingredients:
- 2 dl quinoa
- 4 dl vegetable broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cucumber, diced
- 1 dl cherry tomatoes, halved
- 1/2 dl fresh parsley, chopped
- 1/4 dl olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa thoroughly under cold water.
2. Cook the quinoa in vegetable broth for about 15 minutes, or until the liquid is absorbed and the quinoa is tender.
3. Allow the quinoa to cool for a few minutes.
4. In a bowl, mix together the quinoa, bell peppers, cucumber, and cherry tomatoes.
5. Add the chopped parsley, olive oil, and lemon juice. Mix well.
6. Season with salt and pepper to taste.
7. Serve chilled as a refreshing side dish or a light main course.
