Ingredients

- For the Posset:
- 200 ml heavy cream
- 50 ml sugar
- 100 ml blood orange juice
- 2-3 tbsp lemon juice
- For the Jelly:
- 100 ml blood orange juice
- 50 ml gelling sugar
- For Garnish:
- Blood orange slices

Instructions

1. In a saucepan, combine the heavy cream and sugar. Bring to a boil and cook for 4-5 minutes.
2. Remove the saucepan from heat and stir in the blood orange juice and lemon juice.
3. Pour the mixture into serving dishes. Allow to cool and chill in the refrigerator for a few hours or overnight.
4. For the jelly, bring the blood orange juice to a boil in a saucepan, then stir in the gelling sugar and cook for a short while longer.
5. Let the jelly cool slightly, then spoon it over the possets. Allow the jelly to set.
6. Before serving, garnish the possets with fresh blood orange slices.
