A tangy and crunchy addition to salads and sandwiches. Preparation Time: 30 minutes
Serving Size: Makes about 2 cups
Ingredients:
- 2-3 red onions
- 2 garlic cloves
- A pinch of black pepper
- A pinch of chili flakes (optional)
- 2 cups vinegar
- 2 cups water
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
Instructions:
1. Thinly slice the red onions and layer them in a glass jar.
2. Thinly slice the garlic and add it between the layers of onions.
3. Sprinkle black pepper and chili flakes on top of the onions.
4. In a saucepan, combine vinegar, water, sugar, salt, and olive oil. Heat the mixture until it reaches a boiling point.
5. Allow the brine to cool and then pour it over the onions in the jar.
6. Store the jar in the refrigerator. Enjoy in salads or as a side dish.
