A quick and easy breakfast enhanced with fresh herbs to kickstart your day.

Ingredients:

- 6 eggs
- A splash of olive oil
- Salt
- Black pepper
- 1-2 tablespoons of fresh herbs (e.g., chives, dill, parsley)

Instructions:

1. Rinse the herbs thoroughly and let them dry on a clean kitchen towel.
2. Drizzle a small amount of olive oil into muffin tins or brush the oil onto the edges of the tins with a paper towel.
3. Crack the eggs one by one into each muffin cup.
4. Bake in the oven at 175°C (350°F) for about 5-12 minutes, until the eggs reach your desired doneness.
5. Remove the egg cups from the oven and place them on a plate or serving tray.
6. Season with a pinch of salt and black pepper, and finish with fresh herbs.
7. Serve warm, at room temperature, or even cold as a picnic snack.
