This delicious pasta dish combines a smooth yogurt sauce with sweet caramelized onions. A vegan and gluten-free option that everyone will love!

Ingredients

Caramelized Onions:
- 2 large red onions, sliced thin
- Pinch of quality salt
- 1 tablespoon dark agave syrup, maple syrup, or coconut nectar
- 1 teaspoon tamari or organic soy sauce
- 1 tablespoon olive oil
"Yogurt" Sauce:
- 1 package soft tofu
- 1 tablespoon tahini
- 1 tablespoon nutritional yeast
- Juice of 1 lemon
- 1 teaspoon agave syrup (or honey)
- 1/2 teaspoon quality salt
- 1 tablespoon olive oil
- 1 garlic clove
- 200 ml pasta cooking water
Pasta:
- 500 g whole grain rice spaghetti or your favorite long pasta
- Olive oil
- Freshly ground black pepper
For Serving:
- Organic pecorino (optional)

Instructions

1. Caramelize the Onions:
- Season the sliced red onions with salt, agave syrup, tamari, and olive oil.
- Spread the onions on a dehydrator tray or a baking sheet lined with parchment paper and dry at 40°C (104°F) for 2-4 hours until crispy. Alternatively, roast the onions at 100°C (212°F) for about 1 hour.
2. Prepare the Yogurt Sauce:
- Blend all yogurt sauce ingredients using an immersion blender or a food processor until smooth and creamy.
3. Cook the Pasta:
- Boil the pasta in salted water until al dente. Reserve 200 ml of the cooking water and drain the pasta.
- Return the pasta to the pot with olive oil. Add the reserved cooking water and yogurt sauce, mixing well.
4. Serve:
- Plate the pasta in a serving dish or warm plates. Top with caramelized onions and freshly ground black pepper. Serve with grated pecorino for those who desire and enjoy with a hearty green salad.
