A delicious Finnish-style buckwheat pancake, perfect for brunch or a savory snack. Preparation Time: 1-2 hours (plus resting time), Serving Size: 4-6 servings
Ingredients:
- 2 dl buckwheat flour
- 2 dl wheat flour
- 1 tsp salt
- 1 tsp sugar
- 1 tsp dry yeast
- 4 dl milk
- 1 dl beer
- 2 eggs
- 50 g butter (melted)
Instructions:
1. In a bowl, mix together the buckwheat flour, wheat flour, salt, sugar, and dry yeast.
2. Gradually add the milk and beer to the dry ingredients, stirring well to combine.
3. Add the eggs and melted butter, mixing until the batter is smooth.
4. Cover the bowl with a cloth and let the batter rest at room temperature for at least 1-2 hours or overnight.
5. Heat a frying pan and add a little butter.
6. Pour some batter onto the pan and cook the blini until golden brown on both sides.
7. Serve the blinis with your choice of toppings such as sour cream, red onion, and vegetable caviar.
