A delightful Russian-inspired dish perfect for brunch or as an appetizer. Preparation Time: 2 hours 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 cups sour cream (about 4 dl)
- 20 g fresh yeast
- 1.5 cups buckwheat flour (about 3 dl)
- 2 teaspoons sugar
- 0.6 cups hot milk (about 1.5 dl)
- 2 tablespoons melted butter
- 2 egg yolks
- 1 teaspoon salt
- 2 egg whites, beaten until stiff peaks form
Instructions:
1. Warm the sour cream until it is lukewarm.
2. Crumble the fresh yeast into the sour cream, add the buckwheat flour and sugar, and mix well.
3. Let the batter rise in a warm place for about 2 hours.
4. Once risen, add the hot milk, melted butter, salt, and egg yolks to the batter, mixing until smooth.
5. Gently fold in the beaten egg whites into the batter until just combined.
6. Heat a skillet and cook the blinis until they are golden brown on both sides.
7. Serve warm with your favorite toppings.
