Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh mushrooms (e.g., button mushrooms)
- 150 g fresh spinach
- 200 ml heavy cream
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some pasta water.
2. Peel and chop the onion and garlic cloves.
3. Heat olive oil in a pan over medium heat. Add the onion and garlic, sauté until soft.
4. Add sliced mushrooms to the pan and cook until golden brown.
5. Add fresh spinach to the pan and cook until wilted.
6. Pour the heavy cream into the pan and stir. Let it simmer for a few minutes. If needed, add a little reserved pasta water to thin the sauce.
7. Season with salt and pepper to taste.
8. Combine the cooked pasta with the sauce and mix well.
9. Serve immediately with Parmesan cheese, if desired.
