A delicious and nutritious broccoli soup, perfect as a light meal or appetizer. Easy to prepare and ideal for weekdays. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh broccoli
- 1 medium onion
- 2 garlic cloves
- 750 ml vegetable broth
- 200 ml cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Lemon juice (optional)
Instructions:
1. Rinse and chop the broccoli into small pieces. Peel and finely chop the onion and garlic.
2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté for about 5 minutes until the onion is soft.
3. Add the broccoli to the pot and pour in the vegetable broth. Bring to a boil and simmer for about 10-15 minutes until the broccoli is tender.
4. Remove the pot from the heat and blend the soup until smooth using an immersion blender or a regular blender.
5. Return the blended soup to the pot, add the cream, and season with salt, pepper, and lemon juice if desired. Heat the soup again, but do not boil.
6. Serve hot, optionally garnished with fresh herbs.
