A delicious and hearty Finnish treat, perfect for breakfast or a light meal. These buckwheat pancakes are easy to make and can be served with various toppings.

Serving Size: 4 servings
Ingredients:
- 3 dl buckwheat flour
- 3 eggs
- 1 tablespoon sugar
- About 1 teaspoon salt
- 5 dl red milk (or regular milk)
- 2 tablespoons vegetable oil
Instructions:
1. In a bowl, whisk together the eggs, sugar, and salt until frothy.
2. Gradually add the milk while stirring continuously.
3. Mix in the buckwheat flour and vegetable oil, stirring until you have a smooth batter.
4. Heat a blini pan and add some butter for frying.
5. Pour some batter onto the pan and cook until the edges set and the bottom is golden brown.
6. Flip the pancakes and cook the other side until golden.
7. Serve with sour cream, red onion, and caviar.
