A delicate and delicious blini recipe, perfect for serving with friends. These yeast-leavened pancakes are served with delightful toppings. Preparation Time: 20 hours (for fermentation) + 30 minutes (for cooking)
Serving Size: About 12 pieces
Ingredients:
Starter:- 4 dl milk
- 1/3 packet yeast
- 3 dl buckwheat flour
- 1/2 tsp sugar
Batter:
- 3 dl all-purpose flour
- 3 eggs, separated
- 1 1/2 dl beer
- 1/2 dl melted butter
- A pinch of salt
For Cooking:
- Butter
Instructions:
1. Prepare the starter: Dissolve the yeast in the milk, then add the buckwheat flour and sugar. Cover and let it bubble at room temperature until the next evening.2. Prepare the batter: Separate the egg yolks from the whites. Mix the yolks into the starter and add the remaining batter ingredients. Whip the egg whites until stiff peaks form and gently fold them into the batter.
3. Cook the blinis: Heat a blini pan or a skillet and add clarified butter. Pour batter into the pan and cook thick pancakes on both sides until golden brown.
4. Serve: Serve the blinis with your choice of toppings, such as sour cream, caviar, smoked salmon, and mushroom salad.
