A delicious dish combining fresh asparagus and a rich butter sauce enhanced with Parmesan shavings. A great choice for a light main course or a side dish. Preparation Time: 30 minutes

Ingredients:
- 500 g fresh asparagus
- 100 g butter
- 1 shallot, finely chopped
- 100 ml white wine
- 1 tbsp white wine vinegar
- Salt and pepper to taste
- Parmesan cheese, shaved
Instructions:
1. Rinse and peel the asparagus if necessary. Trim off the woody ends.
2. Boil the asparagus in salted water for about 3-5 minutes until tender but still crisp. Drain and keep warm.
3. Prepare the butter sauce: melt the butter in a saucepan over low heat. Add the chopped shallot and sauté until soft.
4. Pour in the white wine and white wine vinegar. Cook until the liquid is reduced by half.
5. Gradually add the butter, stirring constantly until the sauce is creamy and smooth. Season with salt and pepper.
6. Serve the asparagus drizzled with the butter sauce and topped with Parmesan shavings.
