Ingredients:

Ribs:
- 4 racks of pork ribs
Rub:
- 2 tablespoons brown sugar
- 1 tablespoon Colman's mustard powder
- 1 teaspoon garlic powder
- 1 tablespoon smoked paprika
BBQ Sauce:
- 1 cup ketchup
- 1 teaspoon garlic powder
- 1 teaspoon fine sea salt
- 1 tablespoon muscovado syrup
- 3 tablespoons Heinz Yellow Mustard
- 6 tablespoons brown sugar
- 3 tablespoons apple cider vinegar
- 1 teaspoon smoked paprika
- 2 tablespoons Jim Beam bourbon
- 1 tablespoon Worcestershire sauce

Instructions:

1. Preheat Oven: Preheat your oven to 170°C (340°F).
2. Prepare the Rub: Mix the rub ingredients together and rub it all over the ribs.
3. Oven Cooking: Line a baking tray with parchment paper, place a rack on top, and set the ribs on the rack. Cover the tray with foil and bake in the oven for 2.5 hours.
4. Make the BBQ Sauce: While the ribs are cooking, prepare the BBQ sauce by measuring all the sauce ingredients into a saucepan. Heat to a boil and simmer until the alcohol has evaporated. Let it cool.
5. Ribs and Sauce: Once the ribs are done, remove them from the oven and brush both sides with the BBQ sauce. Grill the ribs until they develop a nice caramelized surface, being careful not to burn the sauce.
