Serving Size: 4-6 servings
Ingredients:
- 1 kg wild turkey breast fillet - 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, crushed
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tsp thyme
- 1 tsp rosemary
- 1 dl chicken broth
- 1 dl red wine
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent. 2. Add the crushed garlic, carrots, and celery. Cook for about 5 minutes.
3. Cut the wild turkey breast into strips and add to the pot. Brown the meat on all sides.
4. Season the stew with thyme, rosemary, salt, and pepper. Mix well.
5. Add the chicken broth and red wine. Bring to a boil, then reduce the heat and let it simmer covered for about 1.5 hours or until the meat is tender.
6. Serve the stew garnished with fresh parsley.
