Sweet Potato and Tomato Gratin

A delicious sweet potato and tomato gratin, perfect for winter meals. Easy to prepare and full of flavor.

Serving Size: 4-6

Ingredients:

- 600 g sweet potatoes
- 2-3 tomatoes
- 1 green chili (or red)
- A handful of herbs (parsley, coriander)
- 1 can of vegetable cream
- 1½ tbsp rice flour
- 2 garlic cloves
- 2 tbsp soy sauce
- Salt
- Pepper

Instructions:

1. Peel the sweet potatoes and slice them into approximately half-centimeter thick rounds.
2. Slice the tomatoes thinly.
3. Mince the garlic cloves.
4. Remove the seeds from the chili and dice it.
5. Chop the herbs finely.
6. Layer the sweet potato and tomato slices in a baking dish, adding herbs and garlic in between. Sprinkle salt and pepper on each layer.
7. Mix the rice flour with the vegetable cream and pour it over the vegetables.
8. Bake the gratin at 180°C for about 45 minutes, until the top is nicely colored. If using a larger baking dish, cooking time may be slightly longer.
9. Optionally, sprinkle paprika on top before placing it in the oven.
