Ingredients:
- 300 g pasta (e.g., penne or tagliatelle) - 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 garlic cloves
- 200 ml heavy cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water. 2. Chop the onion and garlic. Slice the mushrooms.
3. Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sautéing for about 3-4 minutes until softened.
4. Add the mushrooms to the pan and cook for about 5-7 minutes until golden brown and the liquid has evaporated.
5. Pour the cream into the mushroom mixture and stir well. Let it simmer for a few minutes until the sauce thickens.
6. Mix the cooked pasta into the sauce. Add a little reserved cooking water if the sauce is too thick.
7. Season with salt and pepper. Stir in the grated Parmesan cheese until well combined.
8. Serve immediately garnished with fresh parsley.
