Ingredients:
- 1 package of tofu- 1 dl soy sauce
- 2 tablespoons olive oil
- 1 red onion
- 2 garlic cloves
- 1 bell pepper
- 2 dl frozen vegetables (e.g., peas and corn)
- 1 teaspoon curry powder
- 1 teaspoon paprika powder
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or basil) for garnish
Instructions:
1. Start by cutting the tofu into cubes and marinating it in soy sauce for about 10 minutes.2. Peel and chop the red onion and garlic. Heat olive oil in a frying pan over medium heat.
3. Add the red onion and garlic to the pan, sautéing for about 3-4 minutes until soft.
4. Add the tofu cubes to the pan and fry them until golden brown on all sides.
5. Chop the bell pepper and add it to the pan along with the frozen vegetables. Mix well.
6. Season the mixture with curry powder, paprika, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
7. Serve warm, garnished with fresh herbs.
