A delicious bacon omelette that combines crispy bacon with a creamy texture, cooked gently in a water bath for perfect results. Preparation Time: 20 minutes
Serving Size: 2-3 servings
Ingredients:
- 150 g bacon
- 4 eggs
- 1 dl milk
- 1 dl fresh spinach
- 1/2 bell pepper (diced)
- 100 g cottage cheese
- 1 tomato (diced)
- Salt and pepper to taste
- Water (for cooking)
Instructions:
1. Place the bacon slices in a cold pan, add a splash of water, and heat over high heat.
2. Cook the bacon until the water evaporates, turning the bacon once during cooking.
3. Once the water has evaporated, reduce the heat and cook the bacon until crispy.
4. Meanwhile, sauté the spinach, bell pepper, and tomato in another pan.
5. Crack the eggs into a bowl, add milk, salt, and pepper, and whisk together.
6. Add the cottage cheese to the vegetable mixture and pour the egg mixture on top.
7. Cook over low heat until the omelette is set and the top is a beautiful golden brown.
8. Serve with the crispy bacon on the side.
