This delicious and nutritious avocado bowl combines wholesome ingredients, making it perfect for lunch or a light dinner.

Ingredients:
- 1 cup red quinoa
- 1 cup rice
- 1 dl grilled corn
- 100 g king oyster mushrooms
- 2 handfuls of kale
- 1 ripe avocado
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp lemon juice
- (for non-vegan version) 100 g burrata cheese
Instructions:
1. Cook the red quinoa and rice separately according to package instructions.
2. Grill the king oyster mushrooms until they are beautifully golden brown.
3. Chop the kale and sauté it lightly in olive oil with salt and pepper.
4. Cut the avocado in half, remove the pit, and slice the avocado.
5. Assemble the bowl: Start with a base of quinoa and rice, then add grilled corn, sautéed kale, king oyster mushrooms, and avocado slices.
6. Squeeze lemon juice on top and add burrata if using.
7. Serve immediately and enjoy!
