Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves (minced)
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1/2 teaspoon nutmeg (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute.
3. Add the fresh spinach to the skillet and cook until it wilts down.
4. Pour in the heavy cream over the spinach and mix well. Let the sauce simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan, salt, black pepper, and nutmeg, if using. Mix until the cheese has melted and the sauce is creamy.
6. Combine the cooked pasta with the sauce. If the sauce is too thick, add a little reserved pasta water.
7. Serve immediately and enjoy!
