Mexican Lentil Stew (Meksikolainen linssipata)

A hearty and flavorful lentil stew with a Mexican twist, perfect for a comforting meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl red lentils
- 1 onion
- 2 cloves garlic
- 1 red bell pepper
- 1 can crushed tomatoes
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt to taste
- Black pepper to taste
- 1 avocado
- Greek yogurt (or vegan alternative)
- Cooked rice for serving
Instructions:
1. Rinse the lentils under cold water.
2. Finely chop the onion and garlic. Peel and dice the red bell pepper.
3. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until softened.
4. Add the bell pepper, cumin, paprika, and cayenne pepper. Stir and sauté for another moment.
5. Add the lentils and crushed tomatoes to the pot. Pour in 4 dl of water. Season with salt and black pepper.
6. Bring the mixture to a boil, then reduce the heat and let it simmer covered for about 20 minutes, until the lentils are tender.
7. Serve the lentil stew with cooked rice, avocado, and yogurt. Enjoy!
