This delicious and nutritious red lentil soup is quick to make and perfect for a weekday meal. Serve with sour cream and feta cheese for an extra touch.

Ingredients:

- 1 cup red lentils (pre-cooked)
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 potato
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Sour cream (for serving)
- Feta cheese (for serving)
- Fresh parsley (for garnish)

Instructions:

1. Peel and chop the onion, garlic, carrots, and potato.
2. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for about 3 minutes.
3. Add the carrots and potato, and continue cooking for another 5 minutes.
4. Stir in the red lentils, vegetable broth, cumin, and smoked paprika. Bring to a boil and then reduce the heat.
5. Let the soup simmer on low heat for about 15-20 minutes, until the lentils and vegetables are tender.
6. Season with salt and pepper. Serve the soup hot with sour cream and feta cheese. Garnish with fresh parsley.
