Delicious and versatile arepas from South America can be filled with your favorite ingredients. They are gluten-free, lactose-free, and vegan, making them suitable for almost any diet.
Preparation Time: 60 minutes
Serving Size: 7–8 flatbreads
Ingredients:
- 4 dl pre-cooked corn flour (such as PAN Harina)
- 4–5 dl hot water
- 1 tsp salt
- 1 tbsp oil (plus additional for frying)
Instructions:
1. Preheat the oven to 250°C (482°F).
2. In a bowl, measure 4 dl of hot water and add the salt. Stir until the salt dissolves.
3. Add the corn flour and mix the dough with a fork. Once it becomes somewhat uniform, use your hands to knead the dough until smooth. Add more water if the dough is too crumbly.
4. Near the end, incorporate the oil and mix until well combined. Let the dough rest covered with a tight lid or plastic wrap for 20-30 minutes.
5. Roll the dough into balls and flatten them into disks about 7-9 cm in diameter and 1 cm thick.
6. Heat a frying pan and add a splash of oil. Cook the flatbreads for 3-4 minutes on each side.
7. Transfer the pre-cooked flatbreads to a rack and bake in the oven for 15 minutes until they feel "hollow" and the surface is crispy.
8. Fill the arepas with your desired fillings, such as avocado, tomato, cheese, or meat.
