Ingredients:
- 400 g fresh mushrooms
- 1 medium onion
- 2 garlic cloves
- 1 tbsp olive oil
- 1 l vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the olive oil in a pot over medium heat and add the onions. Sauté the onions for about 5 minutes until they are soft.
4. Add the sliced mushrooms and garlic to the pot. Cook for about 5-7 minutes until the mushrooms are tender and the moisture has evaporated.
5. Pour the vegetable broth into the pot and let the soup simmer for about 10-15 minutes.
6. Blend the soup with an immersion blender or in a blender until smooth.
7. Stir in the cream and mix well. Heat the soup again, but do not boil.
8. Season with salt and pepper to taste.
9. Serve the soup garnished with fresh parsley.
