Ingredients:
- 1 duck breast (341 g)
- Approximately 200 g spaghetti (AXA white fiber pasta)
- Salt
- Pepper blend from grinder
Sauce:
- 10 dried apricots
- ½ red onion
- 1 tablespoon olive oil
- 100 ml chicken broth
- 1 tablespoon honey
- Black pepper to taste
Instructions:
1. Cook the spaghetti in salted water according to package instructions. Drain and keep warm.
2. Heat a skillet over medium heat. Season the duck breast with salt and pepper. Place the duck breast skin-side down in the skillet and cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes. Remove from the skillet and let rest.
3. Prepare the sauce. Chop the red onion and sauté it in olive oil in the skillet. Add the chopped apricots and chicken broth, and simmer for 5 minutes. Stir in honey and black pepper to taste. Blend the sauce with an immersion blender until smooth.
4. Slice the duck breast. Serve the spaghetti on plates, top with sliced duck breast, and drizzle the apricot sauce over it.
