Ingredients:
- 4 duck legs - 4 dl duck fat
- 2-3 garlic cloves, crushed
- 4-5 sprigs of fresh thyme
- Salt
- Black pepper
- 800 g potatoes
- 2 tbsp fresh parsley (optional)
Instructions:
1. Begin by marinating the duck legs. Rub them with salt, black pepper, crushed garlic, and thyme sprigs. Let them marinate in the refrigerator for at least 12 hours.2. Preheat your oven to 120°C (250°F).
3. Remove the duck legs from the marinade and place them in an oven-safe dish. Pour the duck fat over the legs, ensuring they are completely submerged.
4. Cook in the oven for about 2-2.5 hours, until the meat is tender and easily pulls away from the bone.
5. Peel and cut the potatoes into your desired size (cubes or slices). Rinse in cold water and dry thoroughly.
6. Heat a frying pan over medium heat and add a bit of duck fat. Fry the potatoes until golden brown and crispy. Season with salt and pepper.
7. Serve the duck legs with the crispy potatoes. Garnish with fresh parsley if desired.
