Ingredients:

- 2 salmon fillets
- 1 orange (juice and zest)
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 200 g asparagus
- 100 g cherry tomatoes
- 1/2 cup fresh parsley (chopped)

Instructions:

1. Preheat the oven to 200°C (400°F).
2. In a bowl, mix the orange juice, zest, olive oil, honey, salt, and black pepper.
3. Place the salmon fillets in a baking dish and pour the orange mixture over them. Let marinate for about 10 minutes.
4. Meanwhile, prepare the asparagus by trimming the woody ends and boiling them in salted water for about 3-4 minutes. Transfer to ice water to stop cooking.
5. Add the cherry tomatoes to the baking dish with the salmon and bake in the oven for about 15-20 minutes, until the salmon is cooked through and the tomatoes are soft.
6. Serve the salmon and vegetables together, garnished with fresh parsley.
