Ingredients:
- 200 g spaghetti
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese
- 1 garlic clove
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a frying pan over medium heat and cook the bacon or pancetta until crispy. Add the minced garlic to the pan and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Combine well.
4. Once the pasta is cooked, drain it and reserve a bit of the cooking water. Add the pasta to the pan with the bacon.
5. Remove the pan from heat and quickly mix in the egg mixture with the pasta. Stir rapidly to lightly cook the eggs with the heat of the pasta, creating a creamy sauce. If the sauce is too thick, add a little reserved cooking water.
6. Season with salt and black pepper to taste. Garnish with fresh parsley if desired and serve immediately.
