Serving Size: 4-6 pancakes
Ingredients:
- 1 cup coconut flour - 2 cups milk (or plant-based milk)
- 2 eggs
- 1 tablespoon honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- Butter or oil for frying
Instructions:
1. In a bowl, mix the coconut flour, baking powder, and salt. 2. In another bowl, whisk together the eggs, milk, honey, and vanilla extract.
3. Combine the dry and wet ingredients, mixing well.
4. Heat a frying pan over medium heat and add a little butter or oil.
5. Pour batter onto the pan to form pancakes of your desired size and cook for about 2-3 minutes on each side, until golden brown.
6. Serve the pancakes with berries, such as blueberries or strawberries, and a cashew-vanilla sauce if desired.
