Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 600 g cream cheese
- 200 g sugar
- 3 eggs
- 1 tsp vanilla extract
- 200 g sour cream
- Fresh berries (e.g., strawberries, blueberries, and raspberries) for garnish
Instructions:
1. Prepare the crust: Crush the digestive biscuits and melt the butter. Mix the biscuit crumbs with the melted butter and press the mixture firmly into a springform pan.
2. Preheat the oven to 175°C (350°F).
3. Prepare the filling: Beat the cream cheese and sugar until fluffy. Add the eggs one at a time, then mix in the vanilla extract and sour cream until smooth.
4. Pour the filling over the biscuit crust and smooth the surface.
5. Bake in the oven for about 50-60 minutes until the cheesecake is golden brown and the center is slightly jiggly.
6. Allow to cool at room temperature and then refrigerate for at least 4 hours, preferably overnight.
7. Decorate with fresh berries before serving.
