A delicious pie combining rice, corn, and vegetables for a delightful meal. Preparation time is about 50 minutes. Serves 8.
Ingredients:
- 1 1/2 dl arborio rice or barley pearls
- About 3 dl water
- Curry powder to taste
- 2 tsp sugar
- 340 g sweet corn (canned)
- 2 bell peppers (one green and one yellow)
- A few sun-dried tomatoes
- Emmental cheese, grated
- 4 eggs
- 2 dl cream
- Salt to taste
Instructions:
1. Cook the rice or barley pearls in water over low heat for about 20 minutes until tender.
2. Add curry powder and sugar to the cooked rice, mixing well.
3. Rinse the sweet corn and add it to the rice mixture.
4. Chop the bell peppers and sun-dried tomatoes, and mix them into the mixture.
5. Grate the Emmental cheese and incorporate it into the mixture.
6. In a bowl, crack the eggs, add cream and salt, and whisk together well.
7. Combine all ingredients and pour the mixture into a greased pie dish.
8. Bake in a preheated oven at 180°C (350°F) for about 30 minutes, or until the top is golden brown.
