Serving Size: 4 servings
Ingredients:
- 400 g pasta (e.g., penne or fusilli) - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 400 g crushed tomatoes
- 1 tsp dried basil
- 1 tsp salt
- ½ tsp black pepper
- 150 g feta cheese, crumbled
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions. Drain and reserve a little cooking water. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 3 minutes.
3. Add bell pepper and zucchini, and cook for an additional 5-7 minutes until the vegetables are soft.
4. Pour in the crushed tomatoes and add dried basil, salt, and black pepper. Let it simmer on low heat for about 10 minutes.
5. Stir the cooked pasta into the sauce. Add reserved cooking water as needed for a creamy consistency.
6. Mix in the crumbled feta cheese and combine well.
7. Serve each portion with fresh basil on top.
