Serves 6-8Ingredients:
- 1 kg potatoes- 4 hard-boiled eggs
- 1 dl mayonnaise
- 1 dl whipped cream
- 1 tbsp vinegar
- 1 tsp mustard
- 1 small onion (finely chopped)
- 2-3 pickles (finely chopped)
- Salt and pepper to taste
- Paprika powder (for garnish)
- Chopped chives (for garnish)
Instructions:
1. Peel and boil the potatoes in salted water for about 15-20 minutes until tender but not mushy.2. Boil the eggs until hard, about 10 minutes, and then cool them in cold water.
3. Drain the boiled potatoes and let them cool.
4. Peel and chop the cooled eggs.
5. Cut the cooled potatoes into cubes and place them in a large bowl.
6. Add the chopped eggs, onion, and pickles to the potatoes.
7. In a separate bowl, mix the mayonnaise, whipped cream, vinegar, mustard, salt, and pepper.
8. Pour the dressing over the potato mixture and gently mix to combine all ingredients.
9. Allow the salad to chill in the refrigerator for at least 1 hour before serving.
10. Garnish with paprika powder and chopped chives before serving.
