Ingredients:
- 2 slices of rustic bread
- 100 g goat cheese
- 2 eggs
- 1 cup fresh spinach
- 2 slices of prosciutto
- 2 sun-dried tomatoes
- Salt and pepper to taste
- Olive oil for frying
Instructions:
1. Lightly fry the bread slices in olive oil on both sides until golden brown and crispy.
2. In a pan, heat a little olive oil and add the fresh spinach. Sauté until wilted and tender. Season with salt and pepper.
3. Add the slices of prosciutto to the pan and cook until slightly crispy.
4. In a pot, bring water to a simmer and add a pinch of salt. Carefully crack the eggs into the simmering water and poach for about 3-4 minutes, until the whites are set but the yolks are still runny.
5. Assemble the toast: on the fried bread, layer the sautéed spinach, followed by the prosciutto and goat cheese. Top with a poached egg and finish with sun-dried tomatoes.
6. Serve immediately and enjoy!
