Perch in Lemon Sauce with Potatoes

*A delightful dish featuring tender perch fillets in a creamy lemon sauce, served with boiled potatoes.* Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 0.5 tsp fish stock
- 0.5 tsp salt
- 0.5 tsp white pepper
- 12 medium potatoes
- 0.5 kg perch fillets
- Juice of 1 lemon
- 2 tbsp white wine or apple juice
- 2 tbsp margarine
- 0.25 tsp black pepper
- 1 bay leaf
- 2 dl cooking cream (7% fat)
- 1 carrot
- 1 tsp turmeric
- 2 tsp grated lemon zest
- 1 yellow onion
- Breadcrumbs (if needed)
Instructions:
1. Peel and boil the potatoes in salted water until tender.
2. Chop the yellow onion and carrot, then sauté them in margarine in a pan until soft.
3. Add the perch fillets to the pan and season with fish stock, salt, white pepper, and black pepper. Cook the fish until done.
4. In a separate bowl, mix lemon juice, white wine or apple juice, and cooking cream, then pour the mixture over the fish. Add the bay leaf and turmeric.
5. Let the sauce simmer on low heat for a few minutes.
6. Serve the perch with boiled potatoes and a sprinkle of lemon zest. Optionally, you can use breadcrumbs to finish the dish.
