Åland Pancake (Ahvenanmaan pannukakku)

A delicious and melt-in-your-mouth pancake perfect for dinner or breakfast, best served with berry jam. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 5 dl milk - 3/4 dl semolina
- 4 eggs
- 1 dl sugar
- 5 dl milk (additional)
- 2 dl all-purpose flour
- 1 tsp cardamom (or cinnamon)
- 2 tsp vanilla sugar
- 1/2 tsp sea salt
- 75 g melted butter
Instructions:
1. Cook the semolina pudding: Bring 5 dl of milk to a boil and add 3/4 dl of semolina. Cook for about 5 minutes and let cool.2. Lightly beat the eggs in a separate bowl.
3. Add the cooled semolina pudding to 5 dl of milk and the egg mixture. Mix well.
4. In another bowl, combine the flour, cardamom, vanilla sugar, and salt. Add the dry mixture to the wet ingredients and stir until smooth.
5. Melt the butter and stir it into the batter. Let the batter rest for about 30 minutes.
6. Pour the batter onto a baking sheet lined with parchment paper.
7. Bake in a preheated oven at 225°C (437°F) for about 30-35 minutes, until the pancake is beautifully golden brown.
8. Serve the pancake with berry jam, such as raspberry-blueberry jam, and optionally with whipped cream or yogurt.
