Ingredients:
- 500 g onions
- 50 g butter
- 1 tablespoon olive oil
- 1 liter vegetable or beef broth
- 100 ml white wine (optional)
- 1 tablespoon sugar
- 2-3 bay leaves
- Salt and pepper to taste
- 4 slices of baguette
- 150 g grated cheese (e.g., Emmental or Gruyère)
Instructions:
1. Peel and slice the onions thinly.
2. Heat the butter and olive oil in a large pot over medium heat.
3. Add the onions to the pot and sauté for about 10-15 minutes until they become soft.
4. Stir in the sugar and continue cooking until the onions are beautifully golden brown and caramelized.
5. Pour in the white wine (if using) and let it evaporate for a moment.
6. Add the broth and bay leaves, seasoning with salt and pepper.
7. Allow the soup to simmer on low heat for about 30 minutes.
8. Toast the baguette slices in the oven.
9. Serve the soup hot, placing a toasted baguette slice on top and sprinkling with grated cheese.
10. Broil the soup briefly until the cheese is melted and has a nice color. Enjoy!
