Ingredients:
- 400 g spaghetti - 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt and black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.2. While the pasta cooks, fry the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, whisk together the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a little pasta water. Add the pasta to the pan with the bacon and mix well.
5. Remove the pan from the heat and quickly add the egg mixture to the pasta, stirring rapidly to create a creamy sauce without scrambling the eggs. If needed, add a little reserved pasta water to achieve the desired consistency.
6. Serve immediately, garnished with fresh parsley if desired.
