A quick and nutritious vegetable pasta, perfect for a weeknight dinner. Preparation time: about 30 minutes. Serving size: 4.Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes.
3. Add the bell pepper and zucchini to the skillet. Cook for 5-7 minutes until the vegetables are tender.
4. Add the cherry tomatoes and spinach to the skillet. Cook for a few more minutes until the spinach has wilted.
5. Toss the cooked pasta with the vegetables. Season with salt and pepper.
6. Serve the portions with grated Parmesan cheese on top, if desired.
