This delicious vegetable pasta is quick and easy to prepare. It’s a perfect meal for weekdays or weekends. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g spinach
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain the pasta, reserving a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened.
3. Add the crushed garlic, bell pepper, and zucchini. Sauté for about 5 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and spinach. Cook for a few more minutes until the spinach is wilted.
5. Mix the cooked pasta into the vegetable mixture and add reserved cooking water as needed to keep it slightly moist.
6. Season with salt and pepper. Serve immediately topped with grated Parmesan cheese, if desired.
