Ingredients:
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1 cup bell peppers, sliced (red and yellow)
- 1 cup snap peas
- 1 medium carrot, julienned
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Cooked rice or noodles, for serving
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
3. Add the broccoli, bell peppers, snap peas, and carrot to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
4. Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly.
5. If using, add the cornstarch mixture and cook for an additional 1-2 minutes, stirring until the sauce thickens.
6. Remove from heat and serve immediately over cooked rice or noodles.
