Ingredients:
- 1 cauliflower
- 1 cup peas (fresh or frozen)
- 1 cup roasted almonds
- 1 cup black or green olives
- Fresh herbs (e.g., parsley, basil, or mint)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions:
1. Chop the cauliflower into small pieces and pulse in a food processor until it resembles couscous.
2. Cook the peas in salted water for about 2-3 minutes until tender. Drain and cool.
3. Toast the almond slices in a dry pan until they are slightly colored.
4. Slice the olives and chop the fresh herbs.
5. In a bowl, combine the cauliflower, peas, roasted almonds, olives, and herbs.
6. Drizzle with olive oil, lemon juice, and season with salt and pepper. Mix well.
