Vappumunkit (Gluten-Free Finnish Donuts)

Ingredients:
- 5 dl gluten-free flour blend
- 1 dl sugar
- 1 tsp psyllium husk
- 1 dl plant-based milk (dairy-free)
- 2 eggs
- 1 packet dry yeast (about 11 g)
- 1 tsp salt
- 1 tsp vanilla sugar (optional)
- Oil for deep frying
- Sugar for dusting
Instructions:
1. In a large bowl, mix the dry ingredients: gluten-free flour, sugar, psyllium husk, dry yeast, salt, and vanilla sugar.
2. Add the eggs and plant-based milk to the dry ingredients. Knead the dough with a mixer and dough hooks for about 5-10 minutes until well combined and fluffy.
3. Cover the dough with a cloth and let it rise in a warm place for about 30-45 minutes.
4. Heat oil in a deep pot or deep fryer to about 175 °C (350 °F).
5. Shape the risen dough into round balls.
6. Fry the donuts in the oil a few at a time until golden brown, about 2-3 minutes on each side.
7. Remove the donuts and place them on paper towels to drain and cool.
8. Roll the cooled donuts in sugar before serving.
