A delicious Thai-inspired cabbage casserole featuring minced chicken, jasmine rice, and coconut milk.

Ingredients:
- 1 kg cabbage
- 400 g minced chicken
- 2 dl jasmine rice
- 1 can coconut milk (400 ml)
- 1-2 chili peppers (to taste)
- 1 tbsp fresh ginger (grated)
- 2 tbsp soy sauce
- 1 tbsp sugar (e.g., cane sugar)
- Salt and pepper to taste
- 1 onion
- 2 tbsp oil
Instructions:
1. Peel and chop the cabbage and onion.
2. Heat the oil in a large pot and sauté the onion until soft.
3. Add the minced chicken and cook until the meat is done.
4. Stir in the chopped cabbage and mix well.
5. Rinse the jasmine rice under cold water and add it to the pot.
6. Pour in the coconut milk, add the chopped chilies, grated ginger, soy sauce, and sugar. Season with salt and pepper.
7. Mix all the ingredients well and let it simmer on low heat with a lid for about 30-40 minutes, until the cabbage and rice are cooked.
8. Serve warm and enjoy!
