Tom Kha Gai - Coconut Chicken Soup

A fragrant and creamy Thai soup made with chicken, coconut milk, and aromatic herbs. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g cooked chicken
- 400 ml coconut milk
- 500 ml chicken or vegetable broth
- 2-3 lime leaves
- 2-3 cm fresh ginger, sliced
- 2-3 garlic cloves, crushed
- 1-2 chili peppers, sliced (to taste)
- 200 g mushrooms, sliced
- 100 g fresh cilantro
- 2 tbsp fish sauce
- 1 tbsp sugar
- Juice of 2 limes
Instructions:
1. In a pot, heat the chicken or vegetable broth and coconut milk over medium heat.
2. Add the lime leaves, ginger, garlic, and chili peppers to the pot. Simmer for about 10 minutes.
3. Stir in the sliced mushrooms and cooked chicken. Cook for an additional 5 minutes, until the mushrooms are tender.
4. Season the soup with fish sauce, sugar, and lime juice. Mix well.
5. Remove the pot from heat and add fresh cilantro.
6. Serve the soup hot, ideally with rice on the side.
