Serving Size: 2 servings
Ingredients:
- 200 g cooked chickpeas
- 1 dl quinoa
- 1 red bell pepper
- 1 cucumber
- 1 avocado
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- Fresh parsley for garnish
Instructions:
1. Cook the quinoa according to package instructions and let it cool.
2. Rinse the chickpeas and drain them well.
3. Peel and chop the red bell pepper, cucumber, and avocado.
4. In a bowl, combine the chickpeas, quinoa, bell pepper, cucumber, and avocado.
5. Add olive oil, lemon juice, salt, black pepper, and smoked paprika. Mix well.
6. Garnish with fresh parsley before serving.
7. Serve the salad with bread or tortillas on the side.
